When it comes to rice, Japan knows that taste and preferences matter. Over centuries, Japan has cultivated different varieties to go with Yoshoku and Washoku traditional dishes according to taste, texture, stickyness and water retention. This is why Japanese rice combos are a match like no other. 🍚

Massigura rice (まっしぐら), from the Aomori (青森) prefecture, is a highly coveted variety for its continual high volume yields and clean taste with low viscosity (低粘度). This particular variety thrives in low temperatures (低温) with higher rainfall (降水量増加), unlike its fellows from the same prefecture. While only recently obtaining its Special A category (スペシャルA), this variety is considered to be very light (あっさり) and relatively sticky (粘り強い) while also being gentle on the palate (柔らかな口当たり). It's notable fluffy texture (ふわふわの質感) makes it excellent as a breakfast (朝ごはん) rice, making it not too heavy or filling for Okinawan philosophy (腹八分目) 🍘
